CISMATIC is a dairy plant unit for continuous production of pressed cheese types where the processing involves the use of mesophilic steptococchi and termophilic lactobacilli bacteria.
The patented CISMATIC unit is provided with a reactor that carries out the operations of drainage and structurizing a curd cheese. After these operations have been processed the curd falls into a drainage cylinder where it is formed and cut off into blocks.
This unit is already employed in the production process of the Italian Asiago cheese type; but it would be suitable also for the production of Cheddar cheese because of the similar production process of both cheese types.
The various chemical-physical functions of the reactor would carry out the cheddaring process, while the souring itself would take a shorter period of time and a continuous production would be ensured.
